Enzymes are proteins that speed up chemical reactions in living cells. Each enzyme fits one substrate, like a key in a lock. Heat changes the shape of an enzyme, so above about 45 degrees Celsius most human enzymes stop working. That is why a very high fever is dangerous, and why food is kept cold to slow the growth of bacteria.
